Sourdough Discard Waffles: 3 cups of sourdough discard 3 eggs 2 tsp baking powder 1/4 tsp of salt 1 tsp cinnamon 2 TBL honey 2 TBL coconut oil or melted butter Combine all ingredients in a bowl and mix well. Allow to sit for 5 minutes then use the batter in your favorite waffle maker as per the maker's instructions. Sourdough Ciabatta Rolls: 1 1/2 cup water 1 cup active bubbly sourdough starter 3-4 cups of organic flour 2 tsp salt 2 TBL honey I combine all of my ingredients and kneed for 5 minutes on medium high with the dough hook attachment of my Kitchen Aid (you could also kneed by hand). I allow my dough to rest on the counter for a good 5 hours... stretching and folding the dough every so often as I think of it. After 5 hours I transfer the dough to the refrigerator and leave it there overnight (or longer) until I'm ready to use it. When I'm ready to use the dough, I pour it out onto a floured surface, and press into a rectangle. I use my bench scraper to cut the dough into about 3"x4" sized rectangles. Transfer the rolls to a parchment lined baking pan and cover with a tea towel. Let rise for an hour. Then bake at 425 until deep golden brown, about 25 minutes. Chia Seed Pudding 1/2 cup Chia Seeds 2 Cups Milk Splash of vanilla 2 scoops of protein powder Maple syrup to taste Mix all of the ingredients together and let sit on the counter for 5-10 minutes. Mix again then place in the refrigerator overnight. The next morning, pour 1/3 cup of heavy whipping cream into the bowl of a mixer and whip into whip cream.
