DO NOT USE A SILICONE MAT OR PARCHMENT PAPER AND MAKE SURE THAT YOU FREEZE THE TRAYS LEVEL. Turn on your freeze dryer and use the following settings: Freeze Time 9 hours - Total Dry Time 36 hours - Target Shelf Temperature 145f - mTorr target 607 (anything between 500 and 600 is ok). If you are pre-freezing the trays you do not need a 9 hour freeze time. Place the trays into your freeze dryer and let the cycle run. Once you get to your final dry temperature of 145f allow the machine to run at that temp for a minimum of 2.5 - 3 hours (you can go longer if you want just not shorter). After the 2.5 - 3 hours of being at 145f reduce the temp of your freeze dryer to 75f and let the machine continue to operate for an additional 1.5 - 2 hours (you can go longer if you want just not shorter) If you cannot reduce the temperature of your freeze dryer during the final stage, then you will have to stop the freeze-drying process and allow your honey to cool off in the chamber while it's still under vacuum and the cooling compressor is on. Make sure to not leave it in there for too long as the cold chamber could affect the end result. I would suggest 30 minutes or so. After the cooling period, release the vacuum pressure and remove the trays. Scrape the crystalized honey off the trays with a spatula and place into Ziplock bag then seal After 20 - 30 minutes the honey crystals will become brittle and easily broken up with your hand. (You can place the Ziplock bag into your refrigerator to speed up the process). Store your honey powder in an airtight container. I find that keeping it in the refrigerator keeps the honey from clumping up. If you store at room temperature the honey powder could clump up. OPTIONAL: Add a little corn starch or potato starch to your honey powder to keep it from clumping up.
