Yam Cake (non halal) - A timeless favorite regardless of age. During our childhood we had this kuih for breakfast or tea break. It's made from yam, rice flour, dried shrimps, dried mushrooms and Chinese sausages. My mom prefer this to be soft without chunks... so we coarsely mash the steamed yam and combine with the rice flour mixture. Serve this with chili sauce. Mmmmm...😋 reminds me of good old days! Recipe: *Ingredients 材料* Yam 芋头- 700g (after peel and cut, around 600g) Shallots 小红葱切片 – 150g Cooking oil 食油- 100ml Rice Flour 粘米粉- 200g Wheat starch 澄粉- 40g Water 水- 600ml *To Steam Yam Cake蒸芋头* Shallot oil 葱油 - 1 tbsp Cooking oil 食油 - 3 tbsp Dried mushrooms 干冬菇泡软切粒- soaked & dice 10g Dried shrimps 虾米泡软切碎- soaked & chop finely 30g Chinese sausages 腊肠切粒 - dice 2 pcs Seasoning - Sugar 糖- 1 tsp White pepper白胡椒粉 – ½ tsp Chicken stock powder 鸡精粉- 1 tsp Five spice powder五香粉 – ½ tsp Soy sauce酱油 – 1 tbsp Salt 盐 – ½ tsp Spring onion 青葱切粒- chop 2 stalks Red chilies 红辣椒切粒- chop 2 pcs 1) Yam pet and cut, place in a bowl of water. 芋头去皮切丁,用水将芋头泡着 2) After wash and drain, steam for 20 minutes until soft and fluffy 洗净沥干后,蒸20分钟至软绵 3) Shallots slice thinly, fry shallots over medium low heat. Fry until golden brown, remove and drain. 小红葱切片, 中小火炸小红葱, 炸至金黄色沥油备用 4) Steamed yam coarsely mash 蒸芋头捣成泥状 5) Coat steam pan with shallot oil 蒸盘刷上葱油 6) In a large bowl add in rice flour & wheat starch. Then gently pour in water. Mix well & set aside .大碗倒入粘米粉& 澄粉, 慢慢倒入水, 拌匀备用. 7) In a wok, add shallot oil & cooking oil. Add in dried shrimp, saute until fragrant. 锅内加入葱油,食油。放入虾米炒香。 8) Add in Chinese sausages, dried mushrooms stir fry for 3 minutes. 放入腊肠冬菇炒3分钟 9) Season with sugar, white pepper, chicken stock powder, five spice powder & soy sauce. 糖,白胡椒粉,鸡精粉, 五香粉&酱油。 10) Add in yam turn heat to medium low heat, season with salt. 放入芋头转中小火, 加入盐调味 11) Pour in flour mixture 倒入粘米粉浆 12) Stir well – cook until mixture thickens 搞勻煮至浓稠 13) Transfer mixture into steam pan 将芋头浆倒入蒸盘中 14) Smoothen with shallot oil, steam for 40 min. 放点葱油扫平表面, 蒸40分钟 15) Once cooked, remove & let cool completely 蒸熟后,放涼 16) Garnish with chilies, spring onion & fried shallots 撒上辣椒,葱花&炸葱
