Today we'll be making baked apples at three different levels. We'll also be making persimmon-orange jam and custard to supplement the apples with. Ingredients needed: Apples, probably [Filling]- 25g | 2.5 TBSP of dates 25g | 3 TBSP of cashews 1 TBSP of jam A dash of nutmeg A dash of cardamom A dash of cinnamon A dash of cloves ★ Level 1 Basic Recipe (4 servings)- -Preheat your oven to 190°C or 375°F. -Make a hole in your apple using a knife or an apple corer. -Prepare a filling for your apple. The options for fillings are endless. We chopped 25g (2.5 TBSP) of dates, 25g (3 TBSP) of cashews and a tablespoon of persimmon-orange jam. Then we added a sprinkle of nutmeg, cardamom, cinnamon and cloves. -Fill your apple, place it in an oven safe dish, add a flake of butter on top and bake for 25 minutes. ★ Level 2 Advanced Recipe (4 servings)- [Quick whipped cream]- Heavy whipping cream 1 TBSP of sugar Vanilla flavoring of your choice (optional) -Add heavy whipping cream to a bowl and mix with a hand mixer or stand mixer at high setting for 30 seconds. -Add a tablespoon of sugar along with any vanilla flavoring of your choice. Whisk until stiff (check frequently) [Custard]- 1 egg yolk 1 TBSP of cornstarch 0.5L | 2 Liquid Cups of milk 2 tsp of sugar Vanilla flavoring of your choice (optional) -Add egg yolk and cornstarch to a bowl. -Measure out milk separately. -Add 2-3 tablespoons of your milk to your egg-starch mixture and combine with any kind of vanilla flavor. -Add sugar to a pot and pour your the rest of your milk on top. -Bring the milk to a boil and while whisking, and then add your egg mixture. -Continue to boil for another minute and store in the fridge until ready to use. -Pour custard on and around baked apples from Level 1, add whipped cream on top. ★ Level 3 GOTY Recipe (4 servings)- [Persimmon-Orange jam]- 4 parts persimmon and orange to 1 part sugar (we used roughly 4 persimmons and 3 oranges (1300g) and 325g of sugar) If you're using a different fruit for this, consider using pectin sugar if necessary. For more details, visit https://www.kilnerjar.co.uk/acidity-a... . -Chop your fruits and combine with sugar. -Boil mixture for about 20 minutes. -Let mixture cool and puree with a hand mixer or blender (optional) -Transfer mixture to a jar that's been washed with warm water and turn jar upside down. This disinfects the lid and creates a seal on the jam. -Let jam cool before using and store in fridge after opening. [Spiced shortcrust coating]- 100g | 3/4 Cups of flour 37g | 3 TBSP of brown sugar A pinch of salt 100g | 2/5 Cups of cold cubed butter 1 egg yolk 1 tsp of cinnamon 1-2 cinnamon sticks (optional) -Combine all ingredients (not the cinnamon sticks) in a bowl and mix with a stand mixer or by hand until dough starts to hold together. -Preheat the oven to 190°C or 375°F. -Core, peel and stuff your apples with your desired filling as seen in Level 1. -Dust work surface with flour and roll out dough to 2mm thickness. -Wrap your apples in dough -Place a piece of cinnamon stick in the middle of your apples as decoration (optional) -Bake for 25-30 minutes and garnish with custard, whipped cream or preferred topping, as seen in Level 2. ★ Timestamps: 00:00- Intro 00:56- Level 1 03:50- Level 2 07:11- Level 3 12:55- Outro Original recipes: https://www.lacigale.co.nz/recipes/pe... https://www.chefkoch.de/rezepte/48808...
