It's been hot outside recently, so this elderflower drink was just what I needed! I collected about 15-20 elderflower heads. Let them stay on a paper towel for a bit to let any insects escape, then shake to make sure any remaining insects are out. Separate flowers from stems using scissors as thoroughly as you can. Squeeze the juice from 3 lemons and cut another 4 lemons into slices, then add to your elderflowers. In a separate pot heat up 1kg of sugar with 1.5 litres of water - let it come to a simmer and mix until sugar dissolves. Switch off as soon as the sugar had dissolved. Pour the water + sugar mixture over your elderflowers with lemons, cover and let it sit for 24h at room temperature. Pour your elderflower syrup through a sieve (ideally with a fine mesh cloth or a towel on top) and squeeze out all the remaining juices. Pour it into a clean sterilised glass jar & store in the fridge. It will last for about 2 months. You can also freeze it in ice cube trays - that way it will last much longer! To make the elderflower drink I used a 1.5 litre bottle of sparkling water with 3 slices of lemon, about 4 tbsp of elderflower syrup and lots of ice. Mix together and stir well.
