Urid maida dosa. Ingredients: Urid dal soaked in water 200 grams. Maida 800 grams. Salt. Coconut oil and ghee. Urid dal shall be grinded fine the previous night and maida shall be soaked in water. Next morning remove the water from the maida and mix the maida into the urid paste, add salt and stir well. Thin Dosas can be roasted in a Pan with ghee and coconut oil on both sides. Dosas can be served with chutney. Mushti dosa. Ingredients: Urid dal 250 grams Dosa rice 750 grams Methi two teaspoon Poha or flattened rice or puffed rice 100 grams. Salt. Coconut oil. Cooking Procedure: Urid dal and dosa rice with methi shall be soaked in water separately for one hour the previous evening. Then urid dal shall be grinded in a tilted grinder and rice, methi with poha in a grinder or mixer separately. Mix the both to form a moderately thick paste. Do not keep the paste in the fridge. Next morning add salt and mix well. Dosas shall be roasted in a Pan with coconut oil and it is roasted single side only by putting the lid on. Dosas can be served with coconut chutney, sambar etc. Chutney Ingredients: Grated coconut. Fried red chillies short and long two each. Raw coriander one spoon. Garlic seeds. Pinch of tamarind. Salt. Grind all the ingredients with water in a mixer to form a chutney of moderate thickness.
