CANNING FROZEN PEAS For years people have thought that you had to make a choice between freezing, drying, or canning your food but that is not always the case. Sometimes you will freeze your food for a more convenient time and then can it. Today I am sharing that scenario. I don’t have a big garden, but I do want to continue preserving food for my family so one of the ways I can do that is by buying frozen vegetables when they come on sale in the grocery store and then can them when I have enough time to do so. Make sure that the vegetables are thawed before you do this method. Put the peas in clean jars that you have checked for flaws. Fill the jars to the 1” head space mark or the bottom of the collar and then fill the jars with water. I start these jars from cold, using cold water and putting the jars into a cold canner so that everything comes up to pressure together. I can peas in pint jars, add a half tsp of salt to each jar, clean your rims, add the screw bands and place in a pressure canner for 40 minutes.
