Aloo Poha Paratha is a unique paratha which tastes great with raita. This dish is also a great option for people who are fasting and ones who are gluten sensitive. Approx. preparation and cooking time: 40 mins Serves 3-4 persons List of ingredients (Paratha): 1. Thick poha (Flattened rice) - 2 cups 2. Potato cubes - 1 cup 3. Green chillies - 2 4. Ginger pieces - 2 5. Chopped coriander leaves - 1 cup 6. Cumin seeds (jeera) - 1 teaspoon 7. Carom seeds (ajwain) - 1 teaspoon 8. Red chilli powder - 1 teaspoon 9. Turmeric powder - Half teaspoon 10. Salt - 1 teaspoon List of ingredients (Raita): 1. Curd (yogurt) - 1 large bowl 2. Chopped onion - 1 cup 3. Cut cucumber pieces - 1 cup 4. Cut tomatoes - 1 cup 5. Grated carrot - 1 small cup 6. Black salt - 1 teaspoon Method of preparation (Paratha): 1. Add 2 cups poha into the mixer jar and grind it to make a fine powder. Then, transfer into a large mixing bowl. 2. Then, add 1 cup potato, 2 green chillies and 2 pieces of fresh ginger into the same mixer jar and grind to make a smooth paste (please do not add any extra water while you are grinding). 3. Now, add the ground paste into the same mixing bowl. 4. Next, add 1 cup chopped coriander leaves, 1 teaspoon cumin seeds, 1 teaspoon carom seeds (gently rub the seeds between your palms before adding. This helps extract the flavour and aroma of the seeds). 5. Now, add 1 teaspoon red chilli powder, half teaspoon turmeric powder, 1 teaspoon salt (can vary as per taste and quantity) and mix all the ingredients to make dough. 6. Add very less water if required, and knead the dough to make it soft (consistency should be similar to that of chapati dough). 7. Coat the dough with oil, cover with a lid and let it rest for 10 minutes before it is ready to be rolled into parathas. 8. Now, roll the parathas (use a round plate/lid to get a nice round shaped paratha) and cook on the tawa, on medium flame. Apply oil and keep flipping until the paratha is nicely cooked on both the sides. 9. Enjoy tasty parathas with raita. Method of preparation (raita): 1. Take a bowl of curd and add 1 cup chopped onion, 1 cup cut cucumber pieces, 1 cup tomatoes, 1 small cup grated carrot and mix well (add a little water if the consistency is too thick). 2. Add sour curd for better taste (optional). 3. Then, add 1 teaspoon black salt (can vary as per taste and quantity), mix again before it is ready to be served. 4. Enjoy fresh parathas with raita.
