Heat butter in a pan and sauté the grated potatoes on high flame for 2 mins, remove them in a bowl and let it come to room temperature, now add in salt, rice flour and custard powder, mix together, shape into hash browns, place on a tray, cover with cling, freeze till you want them to fry, shallow fry and serve. ------------------------------------------ LOADED CHICKEN SCRAMBLED WITH CHEESE SAUCE Ingredients for Scramble Eggs 4 Milk ¼ cup Black pepper ¼ tsp Mayonnaise 2 tbsp Cream cheese 1 tbsp Butter 2 ounce Ingredients for Filling Butter 1 ounce Oil 3 tbsp Chopped garlic 1 tsp Shredded chicken ¼ cup boiled Onion chopped 2 tbsp Olives chopped 2 tbsp Spring onion chopped 2 tbsp Capsicum finely chopped 2 tbsp Mushrooms sliced ½ cup Salt & pepper ½ tsp each Hot sauce ½ tbsp Ingredients for Cheese Sauce Butter 1 ounce Crushed red pepper ¼ tsp Paprika ½ tsp Flour 1 tbsp Milk ¾ cup Cream cheese 3 tbsp To Serve with Cheese sauce as required Croissant as required Spring onion leaves for topping Hash browns as required METHOD Beat eggs, milk with black pepper, keep aside. Heat butter and oil for filling, fry garlic, add all the vegetables and chicken, mix well, add spices and sauté for min, remove from pan. In the same pan heat some butter, pour the egg mixture, cook on low flame, keep stirring constantly on low flame till the scramble begins to come together, finally add mayonnaise and cream cheese. Once the scramble is ready, add the cooked filling to it and mix. TO MAKE CHEESE SAUCE Heat butter, add crushed red pepper, paprika, flour, fry for a min, add in milk and cheese, cook till it comes to boil and thickens, remove scramble in plate, drizzle some cheese sauce on top, serve remaining sauce on the side, place the croissant on the plate with 2 hash browns. ------------------------------------------ ROASTED BEEF CROISSANT SANDWICH Ingredients for Roasted Beef Undercut 500 gm thinly sliced Ginger garlic paste 1 tbsp Black pepper 1 tsp Salt ½ tsp Oregano ½ tsp Vinegar 2 tbsp Soya sauce 3 tbsp Oil ¼ cup Ingredients for Sauce Mayonnaise ¾ cup Yogurt ¼ cup Mustard paste 1 tsp heaped Black pepper ½ tsp Garlic paste ½ tsp Honey 1 tbsp To Assemble Croissants 2-3 Cheese slices or puck cream cheese as required Onion slices round cut as required METHOD Apply all the marination ingredients on beef fillet, leave it to marinate for few hours, cook in a grill pan for 10 mins till done. Mix together ingredients for sauce, apply sauce in between croissant, put roasted undercut then cheese slice and onion rings, serve sandwich warm.
