Both of them shared their cancer journeys. Jaishree Kannan did a demo for Kosumbri, a delicious savoury South Indian Salad that made eating raw very familiar for her. Indians eat a lot more cooked food than raw, and South Indian meals rarely contain raw foods so turning almost 100% raw when she got a recurrence of ovarian cancer was a bit shift, and she did it. This salad is largely raw with some cooked tempering for flavour Kosumbri Ingredients • 1 cup grated unpeeled carrot • 1 cup shredded cabbage • ½ cup split green gram (moong) dal, soaked for 4-6 hours • ¼ tsp unrefined salt • 2 tbsp lemon juice • ¼ cup grated fresh coconut (you can buy this in an Indian store) • 1 tbsp chopped fresh coriander leaves, for the garnish (optional) • 1 tsp crushed chilli and ginger ( optional) For the Tempering • ½ tsp black mustard seeds • 6-10 curry leaves • ⅛ tsp asafoetida (hing) Method In a bowl, take the carrot, cabbage, soaked dal, lemon juice, coconut , crushed ginger & chilli and salt. Mix well. In a heated pan, dry roast the mustard seeds, curry leaves . Turn off the heat and add asafoetida. Add this tempering to the rest of the ingredients and mix. Garnish with coriander leaves and some grated fresh coconut. Serve.
