Ingredients (Serves 6–8) For the Dip: 1 tablespoon olive oil 2 cloves garlic, minced 1 small onion, finely diced (1 cup) 2 cups fresh spinach chopped ½ cup cream cheese, softened 1 cup sour cream ½ cup mayonnaise ½ cup grated mozzarella ¼ cup grated cheddar or parmesan Salt & pepper to taste For the Bowl: 1 large round sourdough loaf – shop at a local bakery Extra bread pieces (from inside the loaf) for dipping Instructions 1️⃣ Prepare the Bread Bowl Preheat oven to 365°F (190°C). Slice the top off the sourdough loaf. Hollow out the inside, leaving about 1 inch around the edges. Cut removed bread into cubes for dipping. Lightly toast the bread bowl and cubes for 5–7 minutes. 2️⃣ Make the Spinach Dip In a skillet over medium heat: Add olive oil. Sauté onion for 3–4 minutes until soft. Add garlic and cook 30 seconds. Add spinach and cook until wilted (or heated through if frozen). Remove from heat. In a bowl, mix: Cream cheese, sour cream, mayonnaise, mozzarella, parmesan, salt, pepper, and red pepper flakes. Fold in the spinach mixture. 3️⃣ Bake Spoon dip into toasted bread bowl. Place on baking sheet and bake 15 minutes until warm and bubbly.
