CHICHARON BULAKLAK (FRIED PORK RUFFLE) | Crispy, Crunchy Pulutan Recipe Crispy, golden, and oh-so-satisfying — we’re making Chicharon Bulaklak, the ultimate Filipino pulutan favorite! 🐷🔥 This crunchy pork ruffle is twice-fried to perfection and best enjoyed with spicy vinegar and an ice-cold beer. Perfect for parties, get-togethers, or weekend cravings! If you’ve ever wanted that perfect timplado crunch just like your favorite bar chow — this easy homemade recipe is all you need. 👇 FULL RECIPE BELOW: 👇 Ingredients: • 1 kilo pork ruffle (pork mesentery) • Vinegar (enough to fully cover the pork ruffle) • Ground black pepper • Salt • Bay leaves • 1 teaspoon baking soda • Cooking oil for deep-frying For the Dipping Sauce: • Vinegar • Soy sauce • Minced garlic • Chopped red onion • Chopped red chilies • Salt Instructions: 1. Pour enough vinegar to fully cover 1 kilo of pork ruffle. 2. Add ground black pepper, salt, and bay leaves. 3. Let it soak for 30 minutes. 4. Boil the pork ruffle to get rid of the smell and add flavor. 5. Pour the vinegar marinade into the boiling water. 6. Add 1 teaspoon of baking soda to remove the smell. 7. Cover and let simmer for 40 minutes to an hour. 8. After 40 minutes, strain the pork ruffle. 9. Allow it to dry overnight in the refrigerator. 10. The following day, cut pork ruffle into chunks. 11. Season with salt and mix well. 12. Deep-fry at medium heat for 9–10 minutes. Do not exceed this time. 13. Allow it to cool for 20–30 minutes and return to room temperature. 14. Fry a second time over high heat for just 2 minutes. 15. Transfer to a rack to let excess oil drain. Dipping Sauce: Combine vinegar and soy sauce. Add minced garlic, chopped red onion, red chilies, and salt. And there it is — your crispy, crunchy Chicharon Bulaklak!
