This is episode 4 of my series where I cook a dish from every State of India. Today I'm making Naga Pork Curry. I think NAGA pORK is the Hottest Traditional Dish from India. This dish is flavored with bamboo shoots and the famous King Chili, also known as Naga Chilli or Ghost Pepper or Bhoot Jolokia. The dish is hot but addictive and delicious. I have added some fatty pieces. You can also add some belly pieces. You can also use any cut of pork. 4 Ghost Pepper (also called Bhut Jolokia, Naga Chilli, King Chilli) 1/3 cup bamboo shoots (I’m using fermented bamboo shoots from an Asian supermarket but the best will be dried bamboo shoot if u can get it) 10-12 garlic cloves 2 inches of ginger 1/2 can of tomatoes or 2 fresh red tomatoes 2 medium or 4 small onions 6 - 7 dried red chillies or 1 tbsp Kashmiri red chili powder. This gives a nice colour to the dish. Salt to taste. I am using 2 tsp.
