This was our first ever distillery tour podcast. We had so much fun learning all about how Ian Stirling got into whisky and then made the decision to build and run a distillery in Edinburgh. It all started when Ian and his flat mate and good friend Paddy Fletcher began sampling whisky, which led to them deciding to start experimenting with distilling their own spirit in their back garden. Fast forward 10 years and they are now the joint owners of a Single Malt Scotch Whisky Distillery in Leith, Edinburgh. One of the most unique things about Port of Leith Distillery is that it is one of the few 'vertical distilleries' in the world. This makes it a great tourist attraction for whisky lovers or just tourists who visit Edinburgh and want to have a whisky experience. Ian kindly took us around the distillery for our very own private tour and talked us through the whole whisky making process and how the distillery works day to day. He explained the many challenges involved in opening your own distillery as well as how the business operates as a tourist attraction and a very popular whisky bar as well. We've always championed Edinburgh as a whisky destination and the whisky history that Edinburgh has is full of great stories and big moments within the world of whisky. Leith in particular has a rich history in whisky and bringing the distillery into Leith has been a huge part of regenerating the area and bringing tourists from Edinburgh City Centre into the area. The distillery is literally a few feet away from the shoreline and stands tall enough to be seen from Fife on a clear day.
