Stir until the sugar dissolves, but don’t let the amaretti soak too long to preserve some texture. Caramelize the Mold: Add 4 tablespoons of sugar to a metal mold and heat it until the sugar melts and turns into a rich, dark caramel. Carefully rotate the mold to coat the sides with caramel, and then tip it slightly to ensure the caramel stabilizes as it cools. Bake the Dessert: Preheat your oven to 180°C (350°F). Heat up some water and pour it into a larger baking tray to create a water bath. Pour the batter into the caramelized mold and place it in the water bath, with water reaching halfway to two-thirds up the sides. Then place the tray in the oven and bake for 30-45 minutes. Test with a wooden stick; it should come out clean when the dessert is ready. Allow the dessert to cool and stabilize first out of the oven, and then in the refrigerator for a few hours. Once chilled, invert it onto a serving plate and decorate with extra amaretti. Enjoy your Latte in Piedi!
