INGREDIENTS For the dough *300 g flour *3 eggs *1 tb. spoon of olive oil for the full recipe please check out out tagliatelle video • Tagliatelle alla Bolognese for the filling *300 g ricotta *100 g grated Parmesan *100 g boiled spinach *Salt, to taste *Nutmeg, to taste Prepare the Filling: Mince boiled spinach until you achieve smooth consistency. Mix together the ricotta, Parmesan, and spinach. Add a pinch of salt and a sprinkle of nutmeg for extra flavor. Mix well until all ingredients are fully incorporated. Set the filling aside while you prepare the dough. Make the Dough: Mound the flour and create a well in the center. Crack the eggs into the well, add olive oil and mix, gradually incorporating the flour from the edges. Knead the dough until it’s smooth and elastic. Wrap it in plastic and let it rest for at least 30 minutes. Shape the ravioli: Roll the dough to about 2 mm thick. Place a spoonful of ricotta filling along the dough leaving 2cm in between. Fold the dough to cover the ricotta and press firmly along the edges to seal each raviolo. Separate the ravioli with a knife and seal the edges with a fork. Cook and Serve: Bring a pot of salted water to a boil. Drop in the ravioli and cook for 3-4 minutes or until they float. Drain and serve with a drizzle of melted butter, sage a sprinkle of Parmesan.
