Preheat the oven Preheat the oven to 425°F before starting the recipe. 2. Rinse and drain Rinse the chickpeas under running tap water and drain well. 3. Dry the chickpeas Pat completely dry using a kitchen towel and paper towel. Make sure the chickpeas are as dry as possible, otherwise they won’t turn crispy. 4. Remove loose skins Remove any loose skins from the chickpeas. You don’t have to peel each chickpea—just discard the skins that are already loosened or separated. 5. Season Transfer the chickpeas to a bowl. Add avocado oil, salt, garlic powder, aamchur, cumin powder, and Kashmiri red chili powder. Toss well to coat evenly. 6. Arrange on tray Spread the chickpeas in a single layer on a baking sheet. 7. Roast Bake at 425°F for 45–50 minutes. 8. Stir halfway After 25 minutes, stir and shake the chickpeas for even roasting. 9. Serve Roast until golden and crispy. Your crunchy roasted chickpeas are ready. Notes • Make sure the chickpeas are very dry before roasting for maximum crispiness. • Removing loose skins helps prevent them from burning during roasting. • Keep an eye on the chickpeas after 40 minutes as oven temperatures may vary and they can brown quickly. • Best enjoyed fresh and crunchy.
