Dudh Puli is a classic Bengali winter dessert prepared with delicate rice flour dumplings filled with a rich mixture of grated coconut and jaggery. This comforting sweet reflects the warmth of Bengali kitchens and the joy of homemade festive cooking. 🥥 Dudh Puli Recipe (Traditional Bengali Style) 🧺 Ingredients For Puli Dough Rice flour – 1 cup Hot water – as needed Salt – a pinch For Filling Grated coconut – 1 cup Jaggery (grated) – ¾ cup Cardamom powder – ½ tsp For Milk Full cream milk – 1 litre Sugar or extra jaggery – as per taste Cardamom powder – ½ tsp Chopped cashews & raisins – optional 👩🍳 Method 1️⃣ Prepare the Filling Heat a pan, add grated coconut and jaggery. Cook on low flame till jaggery melts and mixture becomes sticky. Add cardamom powder, mix well, and let it cool. 2️⃣ Make the Dough Take rice flour in a bowl, add a pinch of salt. Slowly pour hot water and mix to make a soft, smooth dough. Cover and rest for 5 minutes. 3️⃣ Shape the Puli Take a small portion of dough, flatten it. Place coconut-jaggery filling in the center. Seal and shape like a dumpling or crescent. 4️⃣ Cook the Milk Boil milk in a heavy-bottom pan till it slightly thickens.
