I’m using fresh turkey in this recipe, but it’s also a fantastic way to use leftover turkey from the holidays. This slow cooker turkey soup is simple to make, packed with flavor, and family-friendly — plus, it’s gluten-free! It thickens as it cools, and the flavors get even better after a day or two, making it perfect for meal prep or leftovers. Why you’ll love this recipe: ✅Cozy & healthy comfort food 🍁 ✅Works with fresh or leftover turkey or chicken ✅Easy, set-it-and-forget-it crockpot recipe ✅Perfect for busy weeknights or holiday leftovers Ingredients: 1 Onion, chopped 3 Carrots, chopped 3 Celery Stalks, chopped 3 Garlic Cloves, minced 1/4 teaspoon Poultry Seasoning or dried Sage Leaves 1/8 teaspoon dried Rosemary 1 Bay Leaf 9 cups Chicken Broth 1/2 teaspoon Salt (optional to taste) Pepper (to taste) 3 cups leftover shredded Turkey (or Chicken); or use 2 fresh Turkey/Chicken Thighs or Chicken Breasts 1 cup Brown Rice (or White Rice) 2 tablespoons fresh Parsley, if desired 2 tablespoons Butter (Optional) Instructions: 1. Place all ingredients into the slow cooker. You can add the rice and leftover turkey or chicken last. If you are using fresh turkey or chicken, add it with the rest of the ingredients. 2. Cook on LOW for 4 hours, or HIGH for 1 hour then LOW for 2–3 hours. 3. Add the rice after 2 hours of cooking on LOW (or after 1 hour on HIGH), then continue cooking. If using brown rice, cook for about 2 more hours on LOW; if using white rice, it may be done sooner. Slow cookers vary, so if the rice isn’t fully cooked, continue cooking until tender. 4. If using fresh turkey or chicken: After 2 hours on LOW, remove the meat from the slow cooker, shred or cube it, then return it to the pot to finish cooking. 5. If using leftover turkey or chicken: Add the shredded meat at the 2-hour mark (with the rice), or add it about 30 minutes before serving. 6. Once everything is tender and heated through, switch the slow cooker to Warm until ready to serve. Enjoy! Tips: This soup thickens when it cools. The flavors really come out after it sits for a day or two, but it will be a thicker soup than when you eat it straight from the Crockpot. If you prefer a thinner soup, just add some water to it when reheating to give it the consistency you like.
