Today we're cooking some Baked Potatoes on the PK Grill using the Littlemore Grid. I used the PK Classic, but you could use the PK 360, or whatever your grill of choice. Also, this is a "Littlemore" recipe because I'm demoing how you can cook baked potatoes easily along with whatever else you might be cooking on your grill, but if you're just wanting to make baked potatoes, there's no reason you couldn't do it without the Littlmore. The recipe and procedure is super simple. You've already got the grill going cooking something else, and we're just going to use that heat to cook some potatoes at the same time. Here we go! You will need: Potatoes (I used two russet potatoes) Olive Oil (you may sub another fat, but I've had good luck with olive oil) Seasoning (I used Susie Q's Santa Maria seasoning which is essentially SPG) That's it! Procedure: Rinse of the potatoes to get the dirt or whatever off. Dry them thoroughly. Coat them well with the olive oil. Sprinkle your seasoning on the potatoes, coat fairly well, to taste -- this is what's going to give you tasty potato skins in the end! And that is pretty much it. Throw them on the Littlemore grid with whatever else you've got going in there, and let them cook for the allotted time. As noted in the video cooking temps and times can vary, so that it scales with whatever you're cooking. For instance I cooked at about 250F, which took me about 2 hours to cook the potatoes. If you were more in the 350F range, I would expect it to take more like 1 hour. If you have any doubts I recommend a quick internet search for cooking times based on temp. I didn't get to detailed on the fire with this video because the idea is that you add these to whatever else you're cooking. For wood, I probably had a hickory chunk in there. Smokiness is good, I wouldn't go too crazy (again, depending on what else is cooking) because you want those skins to be tasty, and too much smoke they might taste like soot! Use your best judgement. That about covers it -- I love the Littlemore Grid, it really opens up the versatility of the PK Grill to be a full meal cooker.
