INGREDIENTS: Filling 12 salted egg yolks 35g.cornstarch 12g.gelatin 90g.water 180g.butter 200g.sugar For the bun wrapper: 410g.low gluten flour or All purpose flour 200g.fresh milk 6g.instant active dry yeast 11g.baking powder 100g. Sugar 1 egg white 1. First we need to prepare the salted egg yolks using a blender,blend the 12 salted egg yolks into crumbs, 2. In a medium heat put 90g.of water in a pan and put 200g of sugar and 12g.of gelatin dissolve together in a medium heat.Add 180g.of butter stirring until all dissolve ang bring to boil until thicken. 3 Pour the crumbs egg yolk in a clean bowl put in the cornstarch,custard powder. 4.Pour the butter mixture into egg yolk crumbs and mix,stirring until all dissolve and no lumps.Put in a bowl and cover with plastic and chill 5 to 6 hours or overnight. For the bun wrapper: 1.Combine flour baking powder,sugar mix well.Pour in the fresh milk and instant active dry yeast and the egg white mix until incorporate. 2.Floured the board and knead by hand or if you have stand mixer it goes so well, knead 10 to 15 minutes until become very soft dough and form like a ball and cover with plastic and set aside for rising for about 1 hour. 3. After an hour cut the dough into 16 equal portion, Dust in some flour to prevent stickiness. Use a rolling.pin roll the edge to make it thinner,the size of the wrapper should be 4 to 5 inches diameter. 4.Put the filling in the middle of your hand and press down so it will easily press and seal. 5. Put the rough side down on a piece of parchment paper or cup cake shee 6.Prepare the boiling water,place the buns on a steam rock steam 8 to 10 minutes . This recipe yields 16 egg custard bun.You can make it smaller buns if you want too.
