Chicken Mandi is a smoky roast chicken and rice dish that is originally from Yemen and is just one of many similar rice and meat recipes in the middle east.The spice rub used to marinate the chicken is called Hawaij. Traditionally, chicken mandi is cooked in an underground oven called taboon, and the resulting rice and chicken has a smoky aroma and flavour from the use of the coals.This is a very mild dish, not spicy at all,unlike biriyanis. Here in this recipe we mimic that cooking method in an oven/otg. We started on the stove, then finished off in a regular oven.Rice is cooked 50% in stove top.The marinated chicken is then slow cooked in the oven on a wire rack placed over the rice. By this method, the dripping from the chicken would fall over the rice and both the rice and the chicken would be cooked at the same time. Hence no need to use artificial flavors like chicken cubes or artificial colours. We used 1121 pusa basmati rice, which is the longest basmati rice developed by the Indian Agricultural Research Institute (IARI). Ideally sella white basmati rice is used for Mandi which has a longer cooking time. Any type of basmati rice can be used. Please subscribe to our channel if you liked the recipe video..
