Box 453 Greenwell Springs, LA 70739 EMAIL: [email protected] INSTAGRAM: / tales_from_an_empty_nest CHOCOLATE SOURDOUGH BREAD: 100g discard, room temp is easier to work with 360g warm water (about 90F) 450g bread flour 40g white sugar 30g cocoa powder 10g salt 7g instant yeast 100g chocolate chips (I used milk chocolate) Mix your discard and water until it looks like milk. Add all of the dry ingredients and mix well. Make sure you don't leave any clumps of flour. Cover and let rest for 1-2 hours or until it doubles. If your kitchen is cold, try sitting it in the oven with the light on (OVEN IS OFF). Put a some flour on your counter and dump out your dough. Add a little more flour to the top and stretch it into a rectangle shape. I fold both sides in and then roll it. Pinch all the seams together. Place your loaf into a buttered loaf pan (mine is 9x5 inches), cover and let rise another 30-45 minutes. While it's resting in the pan, preheat your oven to 350. Once it has doubled again, bake for 40 -60 minutes or until the internal temp reaches 200F. My friend bakes hers for 35-40 minutes and it took a full hour for me. That's why I highly encourage you to get a thermometer so you can check it. (Mine is a meat thermometer lol). Once the bread is done, flip it out onto a cooling rack and let it cool before cutting.
