This modern cocktail is made with a smoky Scotch Whisky, Cynar, Punt e Mes (Sweet Vermouth), Cherry Liqueur, Orange Bitters and an Orange twist. This peaty, bitter, sweet and citrusy cocktail was created by Tommy Klus, a Portland-area bartender and whisk(e)y expert. The drink was a riff on an earlier drink Klus created called the Black Lodge, which was named after the creepy, netherworld as experienced mostly through the eyes of Special Agent Dale Cooper in Twin Peaks. The Black Lodge was a the same as the Scotch Lodge only the base spirit was overproof Rye Whiskey instead of smoky Scotch whisky. The Black Lodge started off as a play on a Manhattan. You can definitely taste the similarity, although, it metamorphosed into a kind of a mutant Boulevardier. This was created around 2011-2012. It was instantly a success and became a hot ticket item on Klus' menu. It was also featured as Gaz Regan's best drinks of 2012 (http://bit.ly/2qcylA6). However, within the next year, Rye Whiskey started to become pretty scarce, particularly the overproof Ryes that Klus was using in his drink (he first made it with Rittenhouse, then switched to Wild Turkey 101). Rye Whiskey was a category that was destroyed mostly by Prohibition. It was left virtually unknown for decades. Then it was rediscovered by taste makers like David Wondrich and Ted Haigh, as well as craft bartenders that were starting to emerge. The demand shot through the roof and with supplies struggling to keep up, it became harder and harder to find a lot of Ryes. (Places like LDI, stepped in and hundreds of Rye brands popped up overnight to fill the gap.) But for Klus, only overproof Rye would do, so he took the drink off the menu. Still wanting to keep the flavors alive, he started playing around with other whisk(e)ys. Soon enough he found the perfect combination for the second coming of the Lodge. He tinkered with a lot of Islays and finally settled on Bowmore. Klus' choice of Sweet Vermouth, Punt e Mes, is pretty unique among Sweet Vermouths. Along with the sweet, baking spice notes of a Sweet Vermouth, Punt e Mes has a slight bitter note. It's excellent in this drink, but if you want to use another Sweet Vermouth, the drink will still work. In that case, I'd suggest adding another barspoon of Cynar to the drink to make up for the lost bitterness. The cherry liqueur is also up to you. Feel free to use your favorite, but Klus recommends Combier Rouge and for me, it's become my favorite cherry liqueur. The recipe dates back to the early 1600's. And it's excellent. (By the way, this is not the same thing as Maraschino liqueur.) I tried it with several different smoky Scotches as well, but I landed on Benromach Peat Smoke. It's not an Islay. It's a Speyside. These days it's rare to have a smoky Speyside, but it used to be more commonplace and it's a characteristic that Benromach has to some degree in most of its expressions. All that being said, use your favorite smoky Scotch. Whatever it is, you won't be disappointed. This drink is so complex and so exciting. It's sweet, bitter, smoky, with a touch of citrus. As soon as I tried it, I knew it was going to be one of my new favorites. I'm sure you'll agree. Enjoy! Recipe: 1.5 oz Smoky Scotch 0.5 oz Cynar 0.5 oz Cherry Liqueur 0.5 oz Punt e Mes (Sweet Vermouth) 1 dash Orange Bitters garnish Orange Twist Stir with ice. Strain into a rocks glass over large hunk of ice. Garnish with orange twist.
