Today we were totally out of snacks!! We are making Coconut Cookies and Granola Bars. Both snacks are super easy to make and delicious! After making them I do keep both in the refrigerator just so they will last a little longer, this is not something you have to do if you are going to be enjoying them within a couple of days. Coconut Cookies: 1/2 cup sweetened condensed coconut milk For this recipe I mixed together a can of unsweetened condensed coconut milk with a 1/2cup sugar. This did give them a sweeter flavor than using a presweetened condensed coconut milk. 2 cups unsweetened coconut flakes 1/2 cup chocolate chips 1 teaspoon vanilla extract Mix all ingredients well, then place on mixture in cookies size piles on a large cookie sheet and bake for 12-15 minutes in the oven pre-heated to 325°F or 162°C. When your cookies are brown around the bottom they are done. Granola Bars: 1cup Peanut Butter 2 cups thick cut oats 2/3 cup honey 1/2 cup chocolate chips 1 tsp vanilla extract 1/4 cup unsweetened coconut flakes 2 tablespoon ground flax seed and wheat germ Mix the first three ingredients well, then add all other ingredients and mix well again. Smash oat mixture into a dish and chill for at least an hour, then cut and enjoy!
