A taste from home AND an ersatz recreation! When I was in high school, my mom discovered Rachael Ray's 30-Minute Meals clam chowder recipe and adapted it to remove the things she found less healthful and appealing. Even now, my mom's adaption of this recipe is one of my childhood comfort foods. But when I make it for myself, I still manage to butcher it: for instance, what if I don't have clams? Keep watching! Recipe & Steps (lifted verbatim from my mom's email to me): 2 T. butter 2-3 slices bacon, chopped up TINY 1 medium onion, chopped 1-2 pieces of celery, chopped 1 t. thyme 2 T. flour 1 milk-carton size Costco dehydrated hashbrowns or 4 c. frozen hashbrowns 1 can evaporated milk 1 carton chicken broth 2 cans chopped or minced baby clams, with juice (do not drain) Over medium high heat, melt butter. Add bacon, onion and celery. Cook at least 5 minutes, stirring often, until onion is golden. Add thyme and cook 1 more minute. Add flour and stir and cook for 1 minute. Add potatoes and stir. Then add rest of ingredients and bring to a boil. Reduce heat to simmer and cook for at least 15 minutes. You can also cook the first set of ingredients in a frying pan and then add them to the liquid ingredients in a crock pot and cook on low for a few hours.
