This tart is made by spreading a generous amount of rich, smooth custard on flaky pastry and then beautifully arranging thinly sliced apples. Finishing it off with apricot jam adds a glossy, refined sweetness and a gorgeous appearance. The fruity tartness of the apples and the gentle sweetness of the custard are a perfect match, making you feel happy with just one bite. This is the perfect dish for entertaining or tea time. ▷Ingredients (6 servings) 2 sheets of frozen pie dough (commercially available 18 x 18cm) 3 small apples (your favorite variety, such as red delicious apples) 1 beaten egg Custard cream 1 egg yolk 20g sugar (granulated sugar) 10g plain flour 100ml milk A few drops of vanilla essence (vanilla oil) 3 tablespoons apricot jam Appropriate amount of kirsch ▷How to make 1) Make the custard cream. Add egg yolk and sugar to a heat-resistant bowl and mix well. When it becomes whitish, add sifted plain flour and mix well. Add milk little by little and mix well. Heat in the microwave (600W) in three batches without wrapping. First, heat for 50 seconds and mix well, heat again for 30 seconds and mix well, heat again for 30 seconds, mix well, spread on a tray, cover with plastic wrap and cool quickly. Once cooled, mix with a spatula and add Kirish to add flavor. 2) Peel the apples, remove the cores, and slice thinly. Make beaten egg and strain through a tea strainer. 3) Prepare a square of pastry dough (18 x 18cm), cut 2.5cm off both ends, brush with beaten egg with the cut side facing outward, stack, and use your fingers to press the inner dough together to seal. Heat the apricot jam at 600W for 40 seconds. Preheat the oven to 180℃. 4) Place a baking tray with parchment paper, place the pastry dough from 3 on top, and poke holes in the bottom with a fork. Spread the custard cream from 1) on top. Place the apples on top and bake in a 180℃ oven for 35 minutes. 5) Spread the apricot jam over the apples and serve warm. *Can also be frozen. If you freeze it, you can warm it up in the microwave and then toast it in a toaster until it's crispy. ▷Recipe book "Chef Matsuo's Recipe Book for People Who Have Never Had Their Cooking Complimented" (KADOKAWA) https://amzn.to/3SqAzJL "Cooking Class by Former Owner Chef Chef Matsuo" (KADOKAWA) https://amzn.to/3WdYwDQ ▷Kouzo Matsuo Biography Former owner chef of French restaurant "Chef Matsuo" Born in 1948.
