The rice is infused with vibrant food colors and mixed with ghee, sugar syrup, milk, and an indulgent blend of dry fruits including almonds, pistachios, raisins, coconut slices, and colorful tutti frutti. What makes this recipe truly special is the addition of khoya, murabba, gulab jamun, and soft rasgullay, creating a luxurious sweetness and beautiful presentation. Perfect for weddings, Eid, Dawats, and celebrations, this Matanjan is a classic dessert that brings flavor, color, and tradition together in every bite.” Here is a recipe of Matanjan | Zarda Satrangi Recipe (Sweet Colorful Rice) Ingredients: Rice 1 kg (sella) Sugar 800 gm Ghee 250 gm Water 4 litre Milk 250 ml Cardamom pods 4-5 pcs Cinnamon stick 2 medium Cloves 8-10 pcs Star anise 2 pcs Raisins 2 tbsp Almonds 2 tbsp Pistachios 2 tbsp Coconut 2 tbsp sliced Tutti fruity green 1/4 cup Tutti fruity yellow 1/4 cup Tutti fruity red 1/4 cup Khoya 1 cup (for garnish) Murabba karonda 1/2 cup gulab jamun 150 gm (5-6 pcs) Ras gully 150 gm (10-12 pcs) Chandi ka warq 1 (for garnish) Food color (green 1/4 tsp, red 1/4 tsp, yellow 1/4 tsp) 👩🍳 instructions: 1. Prepare the Rice 1. Wash the 1 kg sella rice and soak for 3 hours. 2. In a large pot, boil 4 litres water. 3. Add 4-5 cardamom pods, 2 cinnamon sticks, 8–10 cloves, and 2 star anise. 4. Add soaked rice and cook until 90% done (kaachi pakki). 5. Strain and set aside. ⸻ 2. Prepare the Sugar Syrup (Sheera) 1. In a wide pot, add 250g ghee. 2. Add 250 ml milk and let it boil. 3. Add 800g sugar and cook until sugar dissolves. ⸻ 3. Add Colors 1. Divide the cooked rice into three parts. 2. In each part, add a tablespoon of water with: • Green color – 1/4 tsp • Red color – 1/4 tsp • Yellow color – 1/4 tsp 3. Gently mix so the colors coat evenly. ⸻ 4. Layer the Zarda In the pot add boiled rice & coconut slices with sugar syrup & cook until rice absorbs sugar syrup: 1. Add colored rice portions on top before simmer. 2. Sprinkle: • Raisins • Almonds • Pistachios • Tutti fruity (green, yellow, red) • Murabba karonda • Gulab Jamun (5–6 pcs) • Rasgulla (10–12 pcs) 3. Cover tightly and cook on dum for 15–20 minutes on low flame. ⸻ 5. Final Mix & Garnish 1. Gently mix the rice so colors stay separate (don’t over-mix). 2.
