Caramel Apple Cheesecake Bars Recipe: INGREDIENTS Crust: 2 cups Graham Cracker Crumbs 1/2 cup granulated sugar 1/4 tsp salt 1 cup (2 sticks) unsalted butter, melted Cheesecake: 2 (8oz) packages cream cheese, softened 1/2 cup granulated sugar 2 large eggs 1 tsp Cookie Flavor or vanilla extract Apples: 1 can of Apple Filling 1 Tbsp granulated sugar 1 Tbsp light brown sugar 1/2 tsp ground cinnamon 1/4 tsp ground nutmeg 1 tsp lemon juice 1/2 tsp cookie nip flavor or vanilla extract Streusel: 1 cup all-purpose flour 1 cup salted caramel crumbled (Yum Crumbs) 1/2 cup light brown sugar 1/2 cup granulated sugar 1 cup Oats (quick cooking) 1/2 tsp ground cinnamon 1/4 tsp nutmeg 1/4 tsp salt 1/2 cup (1 stick) unsalted butter cold, cubed Extras: 1/2 cup caramel topping, for drizzling after being baked This can be any caramel sauce of your choice. Lightly grease or line a 13x9-inch baking pan with parchment paper, leaving a 2-inch overhang on each side to easily remove dessert. FOR THE CRUST: In a large bowl, combine graham cracker crumbs, sugar, salt, and melted butter until it comes together. It will be super dry and crumbly at first, and then will suddenly pack together and look moist. Press evenly into the prepared pan. Bake at 350˚F for 15-20 minutes or until lightly browned. FOR THE CHEESECAKE: In a large bowl, beat the cream cheese and sugar with an electric hand mixer at medium speed until smooth. Add the eggs, one at a time, mixing after each addition. Then add flavor. Stir to combine flavor. Pour over warm crust. FOR THE APPLES: In a small bowl, add can of pie filling, chop apples into cubes of the filling, add sugar, cinnamon, nutmeg, lemon juice and flavor. Mix well until everything is incorporated. Spoon apple mixture evenly over the cheesecake filling. FOR THE STREUSEL: Cut one stick of cold butter into small cubes, add to bowl, combine all ingredients in a medium size bowl with a fork (or your fingers) until crumbly. Sprinkle over the top of the apples. Bake at 350˚F for 30-35 minutes, or until the filling is set. Cool at room temperature for 1hr, then refrigerate until chilled, about 2 hours. Drizzle the cheesecake bars with caramel topping just before eating.
