This pumpkin pie is bringing back the FULL SLICE! No more slivers or skipping out on dessert this autumn, because this layered pumpkin chiffon pie is so light you won’t even notice how much you’ve eaten until it’s gone! This pie packs all the traditional pumpkin spices (cinnamon, nutmeg, allspice, and ginger), into a third of the weight of a traditional pumpkin pie. And don’t forget about the layer of cinnamon and vanilla whipped cream sandwiched between the pumpkin spice goodness. My only regret is that the whipped cream layer should be doubled! Your friends and family will all be begging for this recipe, I know it (because mine was)! INGREDIENTS: Gingersnap crust (recipe below) 1/3 cup granulated sugar 1 envelope unflavoured gelatin (7g) ½ teaspoon ground cinnamon ½ teaspoon ground allspice ¼ teaspoon ground nutmeg ½ cup milk 3 egg yolks 1 cup canned or mashed cooked pumpkin * * 3 egg whites ¼ cup granulated sugar 1 cup whipping cream ¼ cup sifted powdered sugar ½ teaspoon vanilla ¼ teaspoon ground cinnamon METHOD: Prepare gingersnap crust: 1 ½ cups finely crushed gingersnaps ¼ cup butter or margarine, softened Combine crushed gingersnaps and softened butter. Press firmly into buttered 9-inch pie plate. Bake at 375F about 8 minutes. Cool. In saucepan combine 1/3 cup granulated sugar, gelatin, cinnamon, allspice, ginger, nutmeg, and ½ teaspoon salt. Stir in milk, egg yolks, and pumpkin. Cook and stir over medium heat till mixture bubbles and gelatin dissolves. Remove from heat; chill till partially set. Beat egg whites till soft peaks form. Gradually add ¼ cup granulated sugar; beat till stiff peaks form. Fold into pumpkin mixture. Pile half the mixture into cooled crust. Combine remaining ingredients (whipped cream, powdered sugar, vanilla, cinnamon); refrigerate half the mixture. Whip remaining half; spread over pumpkin mixture. Top with remaining pumpkin; chill till firm. To serve, whip reserved whipping cream mixture; pass with pie.
