Created by InShot https://v.inshot.com/invite Salvadoran Quesadilla Cake 1 3/4 C. Sifted Cake Flour 1 t. Baking Powder 1/4 t. Salt 1 stick (1/2 C.) Butter 3/4 C. Sugar 2 Eggs 3 T. Sour Cream 1/2 oz. (1/4 C.) Parmesan Cheese, finely grated 1/2 C. Milk 1 t. Sesame Seeds, not toasted (opt.) Preheat oven to 400*. Prepare a 9x9 inch baking pan with shortening and parchment paper. Whisk (I sifted) together Flour, Baking Powder, and Salt. Set aside. In another bowl, with an electric mixer, cream together Butter and Sugar until pale in color, about 1 minute. Beat in Eggs, Sour Cream, and Cheese. Add milk. Add wet ingredients to dry ingredients, stirring just until combined. Transfer to prepared baking pan, smooth top. Sprinkle with Sesame Seeds before baking, if desired. Bake until toothpick inserted in center of cake comes out clean, about 30-40 minutes. Allow to cool slightly before removing from pan. Remove from pan. May be served warm or cooled. (I checked my cake at 25 minutes, the toothpick came out clean, but I wanted a little more browning, so I left it in for 2 minutes longer. A total of 27 minutes. Serves about 8-12.
