Ingredients: Flaky Paratha : AP Flour/ Maida - 2 Cups Kalonji - 1/2 Tsp Pinch of Salt Sugar - 1/2 Tsp Oil - 1.5 Tbsps Milk - 2 Tbsps Lukewarm Water - to Knead Kachumbar : Onion - 1 no Beetroot - 1 no Capsicum - 1 no Salt - to Taste Chaat Masala - 1/4th Tsp Lime Juice - 1.5 Tbsps Tawa Paneer : Paneer - 400g Ginger Garlic Paste - 1/2 Tbsp Coriander Pwd - 1/2 Tsp Cumin Pwd - 1/2 Tsp Chilli Pwd - 1/2 Tsp Turmeric Pwd - 1/4th Tsp Garam Masala - 1/2 Tsp Rock Salt - a Pinch Mustard Oil - 2 Tsps Lime Juice - 2 Tsps Hung Curd - 2 Tbsps Green Chutney : Boondi - 1 Tbsp Coriander - 1 Cup Mint - 1/4th Cup Green Chillies - 5 nos Salt - to Taste Sugar - A pinch Lime Juice - 2 Tbsps Garlic - 6 Cloves Hung Curd - 1/4th Cup Ice Cubes - 2 nos Process : For the Paratha : Start by mixing flour, kalonji seeds, a pinch of salt & sugar along with some milk Knead a semi soft dough with the help of lukewarm water as required Transfer the dough to a flat & clean surface & stretch and knead the dough for 3-5 mins Next, incorporate some oil in the dough & knead it for atleast 5-7 mins until it becomes smooth & pliable Round up the dough, apply oil on it’s surface & cover it with a damp muslin cloth - keep aside and allow it to rest for atleast 30 mins Once the dough has rested well, divide it into 4 equal portions & round it up Dust some dry flour on a dough ball & roll it out thinly Apply a thin layer of ghee/ oil on the top side of the rolled roti & sprinkle some dry flour Fold the roti as shown in the video & create pleats with the help of your fingers Stretch the pleated dough as much as possible & roll the pleated dough like a swiss roll Now secure the end by tucking it at the bottom gently Repeat this process with the rest of the dough balls, cover them with a damp cloth & allow them to rest for another 15 mins Dust some dry flour on a rolled dough ball & roll it out thinly like a roti Pan-fry the laccha paratha with some ghee - allow it to cook evenly on both sides & take it off the heat Place the cooked paranthas on a soft cloth, apply some ghee on top & cover & keep aside until later - Repeat the same process for all the paranthas For the Tawa Paneer : Mix together some ginger garlic paste, hung curd, coriander pwd, cumin pwd, red chilli pwd, turmeric pwd, garam masala, rock salt, mustard oil, lime juice & salt to taste - mix until everything is well combined and homogenous To the marinade, add in the cubed paneer & coat them in it evenly - set aside to rest in the refrigerator for atleast 30 mins Once the paneer has marinated for 30 mins - panfry them on a nonstick pan with some oil until they are golden brown and crisp on all sides Take them off the pan & keep aside for later For the Green Chutney : To a blender, add in some soaked boondi along with coriander leaves, mint leaves, garlic cloves, green chillies, salt & sugar to taste, some lime juice & 2 cubes of ice - blend until the chutney breaks down completely Next, add in the hung curd & blitz until the chutney is homogenous & well combined - do not over blend at this stage Remove the chutney in a bowl & keep aside for later For the Kachumbar : To a bowl, add in the thinly sliced onion, beetroot and capsicum along with some lime juice, salt to taste & lime juice - toss well & refrigerate it until needed To Assemble the Kathi Roll : Place a laccha parantha on a flat surface Top it up with a generous layer of the kachumbar followed by the tawa paneer, some fresh green chutney, some red garlic chutney/ ketchup ( optional ) Sprinkle some chaat masala, followed by some finely chopped green chillies & fresh coriander leaves Roll it carefully as shown in the video - you can also secure one of the ends with a piece of foil or parchment paper Serve hot & Enjoy this wholesome snack with your friends & family 🌯♥️ Music: • royalty free lo-fi vlog music | best songs...
