Paneer Kaju Curry Recipe Ingredients: 200 gm paneer, cut into cubes 100 gm curd (yogurt) 75 gm cashews (kaju) 2 medium onions 5 green chilies 1/2 inch ginger 6 cloves garlic 1 tsp mirchi powder (red chili powder) 1 tsp dhaniya powder (coriander powder) 1/2 tsp turmeric powder 1/2 tsp jeera powder (cumin powder) 1 tsp garam masala powder 1 tsp kasuri methi (dried fenugreek leaves) Salt to taste 2 tbsp oil 1/2 glass water Fresh cream for garnish Coriander leaves for garnish Preparation Method: 1. Prepare the masala paste: Heat 1 tbsp oil in a pan. Add chopped onions and fry until golden brown. Add chopped green chilies, ginger, and garlic. Fry for another minute. Let the mixture cool. Grind the mixture into a fine paste. 2. Prepare the curd mixture: Beat the curd with mirchi powder, dhaniya powder, turmeric powder, jeera powder, garam masala powder, kasuri methi, and salt until smooth. 3. Cook the paneer and cashews: Heat 1 tbsp oil in a pan. Add paneer cubes and cashews. Roast until the paneer is lightly browned. 4. Make the curry: Add the ground masala paste to the pan with paneer and cashews. Cook for 5 minutes on medium flame. Add the curd mixture and 1/2 glass water. Cook for another 5 minutes on low flame. 5. Garnish and serve: Garnish with fresh cream and coriander leaves. Serve hot with roti, chappati, phulka, or white rice.
