Paneer is indian cottage cheese which is similar in consistency to Tofu.In the United States, Paneer is also called Farmer's cheese. The main reason for doing a pot in pot pressure cook is to eliminate the possibility of the "Burn" message. After you make the gravy and before you add the paneer, you can take out a potion of the gravy out and freeze it for later use. Alternatively you can use tofu/grilled chicken for making a different variation of the dish. This dish goes very well with Butter Naans.
