Ingredients: Recipe makes enough for 30-32 mini pies For the Crust: 1 1/2 cups (1 wrapped pkg.) graham cracker crumbs 1/4 cup unsalted butter, melted 2 tbsp. sugar 1/4 tsp. cinnamon For the Filling: 3 large egg yolks 1 (14 oz) can sweetened condensed milk 1/2 cup fresh lime juice (use fresh or Nellie & Joe's Famous Key West Lime Juice) Zest from 1 lime Green food coloring (optional for St. Patrick's Day touch!) For the Whipped Cream Topping: 1/2 cup heavy cream 1 tbsp. powdered sugar 1 tsp. vanilla extract Lime zest (optional, for garnish) Instructions: Prepare the Crust: Preheat your oven to 350°F (175°C). Line a 24-muffin tin with cake liners. In a medium mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and cinnamon. Stir until everything is well coated and crumbly. Spoon about 1 tablespoon of the graham cracker mixture into each muffin cup and press it down firmly with the back of a tablespoon to form the crust. Bake the crusts for 5-6 minutes, until golden. Remove from the oven and allow them to cool completely. Make the Key Lime Filling: In a mixing bowl, whisk the egg yolks until they become slightly thickened. Add the sweetened condensed milk, fresh lime juice, and lime zest. Whisk until the mixture is smooth and well combined. If desired, add several drops of green food coloring to achieve a light green hue. Carefully pour or spoon the lime filling over the cooled graham cracker crusts in each muffin cup. Fill each cup almost to the top leaving a tiny bit of space to allow for expansion. Bake for 10-12 minutes, until the edges are set, but the center is slightly wobbly (like a custard). Remove from the oven and let cool to room temperature. Cover and transfer the muffin tin to the refrigerator and chill for at least 6 hours, or overnight if possible. Whipped Cream Topping: Once the tarts have chilled, make the whipped cream topping. In a chilled mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Remove the muffin liners. Spoon or pipe a dollop of whipped cream on top of each tart. Garnish & Serve: Garnish each tart with a sprinkle of lime zest or even a small slice of lime for an extra touch of color. Serve immediately or keep them chilled until ready to serve.
