Dalwale mutton Paya: Note: From today I am starting a serial named “100 NON VEG RECIPES”. I will upload an episode on every Tuesday afternoon during 4 pm to 5 pm. Please watch and encourage me. Thank you. Episode-1 Paya that is trotter can be cooked in various ways. Onion paya, khushk paya, Daal wale paya etc. we will cook Daal Wale Paya. Ingredients and Method. (Part -1) 1. 2 pairs (jod) Goat paya (trotters) . Our paya weigh 1250 gms . Clean and cut to pieces. Your butcher will do that for you. 2. 2 Tspoon oil. 3. Half Tspoon sanchal powder. ( black salt or pink salt) as a tenderiser. 4. 5 cups water. In a pressure cooker take all the above ingredients and cover the lid and blow 2 whistles on high flame and 8 whistles on medium flame. Cook on low flame for 45 minutes. When steam is completely released open the lid and check paya. Paya is tender. If not tender cook for more time on low flame till paya is tender. Part-2 Take 1.5 cups Tuvar daal (yellow lentils). Wash for 3-4 times and soak in water for 1 hour. After 1 hour drain water and take Daal in another cooker. Pour 5 cups of water or above 1” of Daal surface. Heat on high flame and when boils turn flame medium and cover the lid. Blow5-6 whistles. Turn off the gas. Part-3 Take 60 gms ginger, 60 gms garlic, 60 gms fresh turmeric (haldi) and 30 gms green chillies. Grind to smooth paste. ( change the proportion according to weight of Paya and Daal) Part-4 In a pot or Tapeli mix boiled Paya and Daal. Put on burner and keep flame medium. Add Masala paste and salt to taste. When boils add 2 Tspoon Garam masala powder. Simmer for 5 minutes on low medium flame. Turn off the gas. Our Daal wale mutton Paya is ready to be served.
