INGREDIENTS 1 cup of raw cashews 1 cup of black mission figs 5 heaped tablespoons of raw honey 1 vanilla bean 1 cup of shredded coconut METHOD Place 1 cup of raw cashews in the food processor Before you add the figs cut the tips off and cut lengthwise (Check if there are any bugs inside) Spoon 4 heaped tablespoons of raw honey into the processor Add 1 cup of shredded coconut Scrape the essence of 1 vanilla bean into the mix Process on high, until all ingredients are blended and form a dough like consistency I added more honey (1 tablespoons) while the food processor was running to create a better consistency to make the ingredients 'stick' Remove from the processor and press firmly into a pyrex dish Refrigerate for at least 30 minutes Cut pieces of the bar lengthways into bar shapes Garnish with sliced figs Suggestion: Ideal for kids school lunches, work snacks or after gym energy bars.
