SINGAPOREAN RICE:• TO PREPARE THE CHICKEN: 700gm boneless chicken cut into strips salt to taste 2,3 tbs heaped crushed garlic 1/2 tsp black pepper powder 1 tsp red chilli flakes 1 tsp chilli powder 1/4 tsp turmeric powder 1/2 tsp chicken powder 1 tbsp vinegar 1 top soya sauce 1 tbsp hot sauce 1 tbsp Worcestershire sauce 1/3 cup oil METHOD: In a bowl add chicken, salt, chicken powder, black pepper powder, red chilli flakes, turmeric powder, vinegar, soya sauce and Worcestershire sauce. Leave for 40 minutes. Heat oil in a pan, then add garlic & Fry till the water dries. Add marinated chicken and cook on medium low flame for two minutes. Pour over a cup of water. Cover and cook on low flame till chicken is tender and thick sauce is left. TO PREPARE THE VEGETABLES with spaghetti 2 tbsp oil 1/2 tsp salt 1/4 tsp black pepper powder 3 tbsp crushed garlic 1 tbsp soya sauce 1 tbsp Worcestershire sauce 1/2 tsp black pepper powder 1/2 tsp chilli flakes 1/2 tsp salt 2,chicken cubs 1 cup carrot cut into strips 1 big red & green capsicum cut into strips 1/2 cup spring onion METHOD: In the same pan heat oil and fry the garlic for 10 seconds. & add the carrots fry 30 seconds. Now add capsicum . Fry for 30 seconds. Now Add soya sauce, salt, pepper, chilli flakes and Worcestershire sauce chicken cubs Stir in the spaghetti and mix well. Turn off the flame. TO PREPARE THE MAYO SAUCE: 1/2 cup mayonnaise 1/3 cup tomato ketchup 1 tbsp hot sauce 1 tbsp mustard paste 1 tbsp Chilli garlic paste Mix all of them together. TO PREPARE THE RICE: 2 cups boiled rice 2 tbsp oil 1 tsp salt 2 tbsp chopped garlic TARKA: 2 tbsp oil 4 green chillies cut into strips 4 dried Kashmir chilli 4 cloves of garlic julienne 1/2 cup peanuts Kari pata In a pan heat 1 tbsp of oil and fry the peanuts till they turn golden now add garlic,green chillies kashmiri chiii kari patta till they turn light golden. TO ASSEMBLE: In a large square platter spread first layer of the boiled rice. Second layer of the spaghetti and fried vegetables. Then the third layer of the cooked chicken. Drizzle over the mayo sauce. Top with the fried peanuts, fried garlic and green chillies. Serve hot.
