Spicy lentil Rice. As you know , a specialty of most of ours is breyani or akni , and this has so much similarities that you'd feel like you're eating breyani without having to put in the full effort. Serve with Roasted meats or on its own... A sprinkling of orange zest and fresh coriander... And you have a winning rice dish made with Spekko Basmati rice. Feed your curiosity and try this recipe. Ingredients 3 TBS olive oil 1 tsp fennel seels 1 tsp crushed chilli 1/2 tsp cumin seeds 3 cinnamon sticks 1/2 tsp pepper corns 4 cardomon pods 1 star anise 1 TBS minced garlic 1 TBS chopped Green chilli 2 shallots, thinly sliced 1 & 1/2 cups Spekko basmati rice (uncooked ) 1/2 cup brown lentils (uncooked ) 1 tsp salt Knob of butter 4 cups water 1 cup beef stock Method In a medium heated pan add the olive oil , fennel seeds , crushed chilli's , cumin , cinnamon , pepper corns , cardomon pods , minced garlic , green chilli and star anise and allow the flavours to release . Add your chopped shallots and fry for 1-2 minutes . Add uncooked basmati rice , lentils and salt to taste and stir fry for a minute. Add knob of butter and put your heat on low Add warm water and beef stock . Cook for 20-25 minutes covered with the lid untill liquid dissapear completely while cooking . Garnish with fresh coriander and orange zest and top with any roasted meat and chicken of your choice .
