In this episode, So Han walks through a few examples of Taiwanese Oolongs. We discover that the newer low-oxidation style has been the popular choice for some time now, though some are still producing high oxidation, high roast teas in the region. We also take a look at GABA, a neurotransmitter that is naturally present in tea, and able to be preserved through its oxidation process by processing in the presence of Nitrogen instead of Oxygen. The Dark Roast oolong presents an unexpectedly light color.
