If you like to dip honey on Gorgonzola cheese pizza, I'm sure you'll like this Financier too❤️ ▶Ingredients (for 12 pieces) -93g Browned butter (about 116g before burning) -101g Egg white -93g Granulated sugar -16g Honey -20g All-purpose flour -20g All-purpose flour -41g Almond flour -2g Salt -26g Gorgonzola cheese (Picante) - Any kind of blue cheese can be used. 1. Put butter at room temperature in a pot and heat it to make browned butter (burnt butter) and leave it for a while to cool. 2. Put egg whites in a bowl and beat well with a whisk, then add sugar, honey, and salt and mix. 3. Sift almond flour, bread flour, and cake flour, and mix with a whisk until no powder is visible. 4. Add the burnt butter set to 60 degrees Celcius and mix until completely combined. 5. Add room-temperature Gorgonzola cheese pieces and mix. 6. Put the finished batter in a piping bag, fill about 35g each in a mold, and bake in a preheated oven at 190 degrees Celsius for 13 minutes. (convection oven) *Baked Financier has a crispy texture on the outside on the day it is baked. As time goes by, the crispy texture disappears and moisture circulates throughout, making both the outside and the inside moist. Storage: You can store it for up to 5 days at a cool room temperature in the food container.
