Final day of feeding Juno before he goes into the fridge. Today I fed Juno in preparation for cold storage. I kept a small portion aside for a final bake. Juno was fed once, given a few hours to eat, and then fed again. Too much water went in on the second feeding, but that will not hurt the starter. If this happens to you, simply add a bit more whole wheat flour in two to three days and carry on. This series shows that starters are forgiving. Sourdough breads like these loaves are also forgiving. Observation matters more than exact measurements. Patience is usually rewarded with sourdough starters. Most errors can be fixed. I will bake with Juno Junior this weekend and will bake with Juno senior in a couple of weeks to show how this starter performs after time in the fridge. For now, this brings the feeding series to a close. You are welcome to follow along, use this series as a reference, or use a measured 1:1 ratio on your own and come back to these videos as a troubleshooting guide if needed.
