How to Prepare Malabar Paratha - Kerala Parotta | Indian multi layered Flat Bread INGREDIENTS: Plain flour - 400g, Oil - 1 cup, Salt to taste, Water as per requirement, METHOD: In a big mixing bowl add plain flour and salt together mix well. Add 3 tbsp of oil into it and again mix it well. Put water as per your requirement and make a smooth and soft dough. Again add 2 tsp of oil all over the dough and mix nicely. Once it done then cover it and live it for 30-45 mins. Make 6 pieces boll with the dough then roll it with a rolling pin and stretch as much as possible into a very thin layer. Smear a layer of oil all over the rolled out sheet. Beginning with one side, fold it over and under alternatively just like making a paper fan. Tap this folded dough on the rolling surface holding both ends with your hand and roll it from both ends towards the center. Press the folded dough with your pump and try to roll them into round shape. Heat the pan put paratha fry the both sides of it without oil(that is your choice you can use oil). Once it done beat it with both of your hands on the sides when it is still hot. It is like clapping your hands with the parathas in between. This will almost crush it, separate the layers and make it flaky. Serve hot.
