Who doesn’t love ice cream? Summer time, (or winter time tbh), there is always a time for ice cream. We decided to turn our favourite dessert into a cake! What better way than to use our favourite ice cream as a base, and all our favourite chocolates and biscuits mixed in?! Don’t be alarmed by the quantities as this does serve 10-12 and can be sliced up for sharing. This is probably the simplest dessert, but always so effective when you slice in and see all the wonderful treats and chocolates. Feel free to substitute any of our fave treats for your own! Don’t forget to tag us in your creations @blondieskitchen. Ingredients: You will need a 23cm springform cake tin 500g Vanilla Ice cream 930g Ben & Jerries Cookie Dough Ice cream 400g Custard Creams, crushed 400g Malteasers, slightly crushed 5 x Crunchie Bars, broken 200g Malted Milk biscuits, crushed 3 x Flakes, crumbled 125g M&Ms Method: Line your cake tin with cling film in both directions, leaving a 5cm overhang so you can lift it out easily once frozen. Try and do this really carefully so there aren’t too many creases in your cling, as they will show up on your ice cream cake. Make sure your ice cream has come up to temperature slightly so its easier to mix in all your additions! In a really large bowl, tip in your ice cream and throw in all your mix ins! Give it a really good mix so all the ingredients are well distributed throughout the ice cream. Tip into your lined mould, and flatten the top with the back of a spatula. Cover with the overhanging cling film, and freeze for at least 4 hours. When serving, remove from the freezer 20 mins before, and turn out onto a cake plate or stand. Top with extra crushed biscuits/chocolate/sprinkles for the wow factor! Slice into 10-12 slices using a serrated knife or cake slice.
