Salmon Tourtière (Salmon Pie) Ingredients: 1 can Salmon 1 egg 1/2 cup onion 4- medium sized russet potatoes 2 - 9” pie crusts 1/8 tsp black pepper 3/4 tsp Thyme Dash of salt Directions: Wash, peel and cut potatoes into medium size chunks, chop onion into 1/2 inch chunks; put into cold pot of water. Boil potatoes until fork tender. Drain and set aside. Open and drain salmon juice into measuring cup and set juice aside. In one smaller mixing bowl place discarded cartilage, bone and skin In larger mixing bowl place the cleaned salmon, add your potatoes and onions, salt, pepper and thyme; mix gently. Slowly add your salmon juice to mixture until it is moist. Place mixture into your prepared raw pie crust, brush edge with egg wash, place top pie crust and pinch and seal both crusts together. Brush remaining egg wash over top and ridge of dough. Make a small vent hole in top of crust. Place into preheated 400 degree oven and bake for 30 - 35 minutes or until golden brown.
