Recipe: 2 flax eggs (2 Tablespoons ground flax whisked with 1/3 cup water) 1 1/2 cups mashed banana (about 3 medium ripe bananas) 3 Tablespoons pure maple syrup 2 teaspoons apple cider vinegar 1 teaspoon pure vanilla extract 2 Tablespoons melted vegan butter 1 cup chickpea flour 1/2 cup oat flour 1 teaspoon baking soda 1 teaspoon cinnamon Dash of sea salt Optional: 1/3 cup vegan chocolate chips 1/3 cup chopped walnuts Preheat oven to 350F and grease a loaf pan. In a small bowl whisk together ground flax and water. Set aside to thicken. In a medium bowl add mashed banana, maple syrup, apple cider vinegar, vanilla, melted butter and the now thickened flax eggs. Mix well. Add all dry ingredients (chickpea flour, oat flour, baking soda, cinnamon and sea salt) to wet ingredients, mixing well but gently. Fold in optional mix-ins. Pour the batter into the loaf pan and smooth out the top. Bake for 40mins, until the top is firm and a toothpick inserted comes out clean. Once the pan has cooled enough to handle, use a knife to loosen the edges of the loaf, flip the pan over and release the loaf onto a rack. Once cooled, slice and enjoy!
