Impress your loved ones with an unforgettable culinary masterpiece that captures the essence of Bakra Eid. #MuttonDumBiryani #MuttonBiryani #bakraEid Mutton Dum Biryani Ingredients for Mutton Marination: Mutton 1 kg Salt 1 tsp Lemon juice 2 tbsp Ginger garlic paste 2 tbsp Turmeric 1 tsp Red chili powder 1 tbsp Coriander powder 1 tbsp NESTLÉ MILKPAK Yogurt 1 cup Fried Onion 1 cup Ingredients for Biryani Masala: Coriander seeds 1 tbsp Cumin seeds 1 tbsp Green cardamom 8-10 Cinnamon sticks 2-3 Black peppercorn 15-20 Red chili flakes 1 tsp Bay leaves 1-2 Cloves 7-8 Nutmeg 1-2 Mace 1-2 Turmeric powder 1 tsp Salt 1 tsp Ingredients for Masala Preparation: Oil 1/2 cup Cumin Seeds 1 tbsp Cloves 7-8 Green Cardamoms 4-5 Black Cardamom 3 Bay leaves 1-2 Cinnamon Stick 2 Marinated Mutton Prepared Biryani Masala 2 tbsp Water 3 cups Ingredients for Boiled Rice: Rice (soaked) 2 cups Water as required Muslin cloth Salt 1 tbsp Kewra 1 tsp Cumin Seeds 1 tbsp Cloves 4-6 Star Anise 3 Green Cardamom 5-6 Black Peppercorns 1 tbsp Bay Leaves 1 Ingredients for Mutton Dum Biryani: Prepared mutton masala Boiled rice Fried onion as required Kewra water 1 tsp Lemon juice as required Green coriander as required Mint leaves as required Biryani masala as required Orange Food Color 2 tbsp Directions for Mutton Marination: 1. In a bowl add mutton, salt, lemon juice, ginger garlic paste, turmeric powder, red chili powder, coriander powder, yogurt and fried onion. Mix it well and set aside for half hour. Directions for Biryani Masala Preparation: 2. In a preheated pan add coriander seeds, cumin seeds, green cardamom, cinnamon sticks, black peppercorn, red chili flakes, bay leaves, cloves, nut meg, mace, turmeric powder and salt. Roast it until fragrant. 3. Now grind it in to a fine powder. Your Biryani Masala is ready. Directions for Masala Preparation: 4. In a pot heat oil and add cumin seeds, cloves, green cardamom, black cardamom, bay leaves, cinnamon sticks and cook for a minute. 5. Add marinated mutton and cook until mutton changes color. 6. Add water and cover and cook for 10-15 mins. 7. Take off lid, mix it well and cover and cook again until meat is fully done. reserve ¼ cup of oil for later use. Directions for Boiled Rice Preparation: 8. In a white cloth add star anise, bay leaf, cloves, black peppercorns, green cardamom and cumin seeds and tie the cloth. 9. Now in pot heat water, salt and tied cloth and salt. Bring water to a boil and add soaked rice and cook it until 80% done. Directions for Mutton Dum Biryani Preparation: 10. In the mutton masala pot add layers of boiled rice, brown onion, yellow food color, kewra, lemon, green coriander, mint leaves, dry biryani masala and reserve oil. 11. Cover it and steam it on low flame for 10-12 mins. 12. Your Mutton Dum Biryani is ready. Prep time: 20-25 mins Cooking time: 1 hour 15 mins Servings: 5-6
