Ingredients: 5 Roma tomatoes, to be roasted 6 garlic cloves, to be roasted 3 shallots, to be roasted (if you cut them up smaller than I did, it’ll be easier for you) 14 green Thai chili peppers, to be roasted 2 dried red Thai chili peppers 2 1/2 teaspoons of padaek 2 1/2 teaspoons of fish sauce Msg to taste, optional Tablespoon of cilantro, optional Method of preparation: Roast the tomatoes, garlic, shallots, & green Thai peppers at 400 degrees for 15-20 minutes or until charred Using a mortar & pestle, blender, or food processor, blend/smash your ingredients until you get the desired texture Jeow Mak Len is pretty much a Lao version of salsa. It is to be eaten with the meats of your choice & rice. Everyone makes theirs a little differently, as no two Lao recipes are exactly the same. But! If you’re a fan of spicy foods, just know that you will love this once you taste it.
