I highly recommend you to use red pink apple as they are special for baking and also are very delicious. The galette works great with many fruits like peaches, cherries or pears. INGREDIENTS: • 160g flour • 20g sugar • pinch of salt • 110g cold butter • 60ml cold water • 2 apples (red pink lady) • 40g sugar • 5g cinnamon • egg wash • sugar to sprinkle • caramel sauce (optional) INSTRUCTIONS: 1. In a bowl add dry ingredients and mix. 2. Add butter and gently shred it with a fork until it gets wet sand texture. 3. Add cold water and start to form the dough. Do not over knead. 4. Wrap the dough in plastic foil and refrigerate for 30 minutes. 5. Cut the apples in thin slices and place them in a bowl. 6. Add sugar and cinnamon and mix with a fork. Set aside to develop the syrup. 7. Roll the dough and optional remove the edges. 8. Place it in a baking tray. Arrange the apples how you want in the centre of the dough. Fold the edges of the dough over the apples to get a beautiful galette shape. 9. Brush with egg wash sprinkle some sugar and bake at 180°C for 20 minutes or until becomes golden brown on the edges. 10. Let the galette to cool. 11. When the galette is cooled, pour some caramel sauce over and serve. Notes: • Butter and water from galette dough must be very cold. • Caramel sauce is optional. • I used red pink lady apple as they are good for baking.
