The Quick Apple Filling Dice Small: Peel and dice 2 apples into very small cubes (about the size of peas) so they fit inside the bread. Thicken: Simmer apples in a pan with 2 tbsp sugar, 1 tsp cinnamon, and a squeeze of lemon. The Slurry: Mix 1 tsp cornstarch with a splash of water and stir it into the pan. This thickens the juice so it doesn't soak into the bread. COOL COMPLETELY: This is critical. Never put hot filling on bread you intend to freeze, or it will turn to mush. 2. Preparing the Bread Trim: Cut the crusts off soft white or brioche bread slices. Flatten: Use a rolling pin to flatten each slice until it is very thin and dense. This makes it act like "dough" rather than bread. Egg Wash: Beat 1 egg with a splash of water. This is your "glue." 3. Assembly Fill: Place about 1 tablespoon of cooled filling in the center of the slice. Seal: Brush the egg wash around all four edges. Fold: Fold the bread over to form a rectangle or triangle. Crimp: Press the edges firmly with a fork to lock the filling inside. 4. Freezing for Storage Flash Freeze: Place pies in a single layer on a tray (not touching). Freeze for 2 hours until rock hard. Bag It: Transfer to a Ziploc Freezer Bag. Label: They will stay fresh for up to 3 months. 5. Cooking from Frozen (No Thawing) The Butter Step: Right before cooking, brush both sides of the frozen pie with melted butter or oil. Air Fryer: Cook at 350°F for 12–15 minutes, flipping halfway. Oven: Bake at 375°F for 25–30 minuteson a parchment-lined tray.
